Sausage Hash

This is a café style breakfast/brunch you can make at home, it’s super tasty and you can make as much or as little as you like.

This recipe serves 3-4

Ingredients:

4 potatoes, cubed

800g spinach or silverbeet, finely chopped

100g Garlic

6 plantbased sausages – bean supreme or tonzo is a good brand

2 onions, sliced

3 tomatoes, cubed

1Tbs mixed herbs

 

Method:

 

  1. Heat oven to 200oC. On a baking tray place cubed potatoes and sausages. Drizzle with oil and roast until golden\cooked. Once cooked, cut the sausages into thirds.
  2. Heat oil in a pan over medium heat. Fry off onions, garlic, mixed herbs and spinach. Add potatoes and sausages, and tomato cubes. Heat it all through.
  3. Serve with vegan aioli, tomato sauce or avocado.
