This is a café style breakfast/brunch you can make at home, it’s super tasty and you can make as much or as little as you like.
This recipe serves 3-4
4 potatoes, cubed
800g spinach or silverbeet, finely chopped
6 plantbased sausages – bean supreme or tonzo is a good brand
2 onions, sliced
3 tomatoes, cubed
1Tbs mixed herbs
- Heat oven to 200oC. On a baking tray place cubed potatoes and sausages. Drizzle with oil and roast until golden\cooked. Once cooked, cut the sausages into thirds.
- Heat oil in a pan over medium heat. Fry off onions, garlic, mixed herbs and spinach. Add potatoes and sausages, and tomato cubes. Heat it all through.
- Serve with vegan aioli, tomato sauce or avocado.
