Serves 3
INGREDIENTS:
3 x med potatoes
1 x large purple kumara
Extra virgin olive oil
1 x pack vege sausages
White sauce:
1.5 cups cashews
1/2 cup nooch
2 x large handfuls parsley
1 x red chilli
3 x lemons juice
2 cups water
Salt & pepp to season
1 x cup almond milk
METHOD:
- Preheat your oven to 200•C, chop your kumara and potatoes into large cubes and place in roasting dish. Add a dash of oil and toss to cover all pieces, season with salt and pepper and roast for 45 minutes turning halfway.
- Place white sauce ingredients (NOT MILK) in blender and blend until smooth.
- 10 minutes before the roasties are ready pour your sauce in a sauce pan and heat on low heat stirring constantly. Add the milk and then continue stiring.
- Open the veggie sauseys and heat on medium heat in a fry pan turning until all sides are golden.
- serves on plates, first the roasties, then the sauseys and finally your white sauce…ENJOY
