Roasties with lemon parsley white sauce

Serves 3


3 x med potatoes

1 x large purple kumara

Extra virgin olive oil

1 x pack vege sausages

White sauce:

1.5 cups cashews

1/2 cup nooch

2 x large handfuls parsley

1 x red chilli

3 x lemons juice

2 cups water

Salt & pepp to season

1 x cup almond milk


  1. Preheat your oven to 200•C, chop your kumara and potatoes into large cubes and place in roasting dish. Add a dash of oil and toss to cover all pieces, season with salt and pepper and roast for 45 minutes turning halfway.
  2. Place white sauce ingredients (NOT MILK) in blender and blend until smooth.
  3. 10 minutes before the roasties are ready pour your sauce in a sauce pan and heat on low heat stirring constantly. Add the milk and then continue stiring.
  4. Open the veggie sauseys and heat on medium heat in a fry pan turning until all sides are golden.
  5. serves on plates, first the roasties, then the sauseys and finally your white sauce…ENJOY
