Loaded Breakfast Bun

Serves 3:

For the scramble:

1 x firm block tofu pressed and crumbled

1/2 cup nooch

1 x lemon (juice)

1 tsp onion powder

1 tsp garlic powder

1/2 tsp chilli flakes

1 tsp Dijon mustard

2 Tbs olive oil

1/2 tsp salt

1 tsp turmeric

For the rest:

1 x pack Bean Supreme Sausages

3 x hash browns

3 x buns

Wise Boys Chipotle Aioli

Prep’s Cashew Cream (heat to instructions)

METHOD:

  1. Pop hash browns in the toaster (usually 3-4 times down depending on how hot your toaster is).
  2. Mash all tofu scramble ingredients in a bowl with a fork of potato masher then fry on med-low heat in a non stick frying pan until it’s starts to get a bit golden
  3. Fry sausages in non stick frying pan to packet instructions
  4. Cut your buns in half and lightly fry the inside side in a dash of olive oil in the frying pan on low heat until golden
  5. Assemble your loaded breakfast buns with bun base, scramble, hash brown, 2 x sauseys, cashew cream, chipotle aioli
  6. Enjoy!
