Herbed Potato Salad

Serves 6


6 x large agria potatoes

Potato dressing:

2 cups cashews

1 cup water

1 handful dill

1 handful parsley

1 handful mint leaves

1/2 cup nooch

2 x garlic cloves

1/2 cup extra virgin olive oil

1 Tbs Dijon mustard

2 Tbs vegan Worcestershire sauce

1 Tbs lemon or lime juice

Salt and pepper to taste

Garnish: edible flowers


  1. Wash and rinse your potatoes then cut into cubes. Boil for 10 mins or until firm but soft in salted water then drain and put in a big bowl in the fridge so they are completely cooled for the next step.
  2. Blend all of your dressing ingredients in a blender. Add more water if you need.
  3. Once your potatoes are cooled fold your dressing through them and then garnish with your edible flowers. Enjoy!
