Cowboy Caviar


For the Caviar:

2 x avocados diced

2 x large ripe tomatoes diced

1 x cup frozen corn kernels

1 x tin black bean drained and rinsed

2 x tin butter beans drained and rinsed

1 x spring onions diced finely

1 x red chilli chopped super fine

1 x cup chopped coriander

1 x cup chopped parsley

2 x large Kumara chopped into cubes

For the dressing:

100ml extra virgin olive oil

3 x Tbs apple cider vinegar

1 x lemon (juice)

1 x lime (juice)

2 x Tbs maple syrup

Salt and pepper


  1. Preheat oven to 200•C. Place cubed Kumara in a roasting dish and toss with a dash of oil and salt and pepper. Roast for 25 mins turning half way and then bring out and cool once fully cooked.
  2. Place all dressing ingredients in a jar with the lid on and shake until mixed thoroughly.
  3. Place all the caviar ingredients into a bowl and stir until combined. Add the dressing and then toss until it’s all coated evenly.
  4. Serve with your roasted Kumara bites and enjoy 😍❤️
