A delicious sauce created by pounding up herbs, nuts and seasoning. You can use almost anything like parsley, spinach…. even kale! You can alternate the cashew nuts with almonds, walnuts, pine nuts, peanuts, whatever you desire. If you don’t have a food processor, put the nuts in a plastic bag and smash them until they’re tiny and chop the other ingredients up super small too. Mix it all together with a fork until it looks like paste. This can poured over zoodles (zucchini noodles or any other kind of pasta).
Here is a classic basil pesto recipe.
2 ½ cups packed torn basil leaves
2/3 cups of cashew nuts
2 cloves garlic, chopped
1 teaspoon of lemon juice or zest
¼ cup olive oil
¼ cup water
¾ tspn salt
- Put all the ingredients in to a food processor and blend until smooth.
