Basil Cashew Pesto

Makes 4 cups

INGREDIENTS:

2 x cups roasted cashews

1 x packed cup basil leaves

1 x packed cup parsley

1-2 cups oil (depending on how thin you like it)

4 x lemons (juice)

4 x garlic cloves

1 x cup nooch

salt & pepper to taste

 

METHOD:

Place ingredients in blender (do the herbs in parts as it can be too packed at the start). Slowly blend and pour the oil as you blend. For a thinner pesto add extra oil.
