Avocado Pesto Pasta



1: Avocado, medium

1 1/2 cups: Basil, loosely packed

3 cloves: Garlic

1 cup: Spinach, frozen

2 tbsp: Lemon juice

300g Pasta, dry

1/2 tsp: Black pepper, fresh ground

1/4 tsp: Salt

2 tbsp: Olive oil

1/4 cup: Cashews



Add all ingredients to a food processor, or  high-powered blender: avocado, olive oils, cashews, fresh lemon juice, thawed spinach, and fresh basil (plus salt and pepper!)

Blend until smooth.

Add to cooked pasta of choice. Serve warm or chilled.

Add some more flavour by topping with sliced cherry tomatoes and pine nuts.
