Artichoke chilli cheesy brekkie quesadilla

Serves 2:


2 x tortilla wraps

2 x handfuls artichoke hearts

2 x handfuls spinach leaves

Chilli Cheesy sauce:

1 x handful cashew nuts

1 x cup water

2 x tsp chilli flakes

2 x garlic cloves

1/2 tsp garlic powder

1 x Tbs nooch

Pinch of salt


1 x ripe avo mashed

1 x medium tomato diced

Juice of 1 lemon

Salt and pepper


  1. Chop up artichoke hearts and sauté with spinach leaves over medium heat for a few minutes.
  2. In a blender blend up your chilli cheesy sauces ingredients until smooth.
  3. Add your sauce to the fry pan and sauté for another couple minutes until quite thick.
  4. 1/2 the mixture into 2 wraps folded over and on a low heat grill each side for 3-4 minutes until browned and crisp.
  5. Mash all your guac ingredients in a bowl.
  6. Serve your quesadillas on 2 plates topped with your mean quac and any fresh herbs you have and enjoy ❤️
